Grilled Flaming Pineapple |

Ingredients: |
1 ripe
pineapple (best with golden pineapple) 8 tablespoons unsalted butter,
melted
¾ cup sugar
1 teaspoon grated lime zest
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
½ cup dark rum (optional) |

Directions: |
Preheat
grill to high. Cut top from pineapple and slice of rind; cut into 8 or 10
even rounds. Using a paring knife, remove the core from each round leaving
the rings intact. When ready to cook, place melted butter in a shallow bowl;
combine the sugar, lime zest, and cinnamon in a separate bowl. Dip each
slice of pineapple in butter then in sugar mixture, shaking off excess.
Arrange the pineapple slices on a hot grate and grill, turning with tongs,
until brown and sizzling, 5-8 minutes. Transfer pineapple slices to platter,
arranging the slices in an overlapping fashion. If using rum, warm it VERY
GENTLY in a small flameproof saucepan. Remove from heat. Make sure your hair
is back and clothing is out of the way ("duh" directions, guess who’s had a
problem with this!!). Light a long match and ignite the rum (avert face at
this step, another "duh"). Carefully pour flaming rum over pineapple and
serve immediately. |
