Black Bean Cakes

Ingredients: |
2 cups
cooked, rinsed, and drained black beans 1 red pepper, minced
1 cup cooked brown (or white) rice
½ onion, minced
2 cloves garlic, minced
½ jalapeno pepper, finely minced
2 cups bread crumbs
1/3 cup vegetable stock
1 tablespoon cilantro, minced (optional)
2 tablespoons flour
1 egg
1 egg white
salt and pepper to taste |

Directions: |
Mash beans
and set aside. Saute onions, garlic, and peppers using 1 teaspoon of oil;
deglaze pan with vegetable stock. Add sautéed vegetables to mashed beans
along with flour, rice, 1 cup of breadcrumbs, cilantro, egg, and salt and
pepper. With mixture, form small cakes. Use the remaining breadcrumbs to
coat each side of each cake. Brown in skillet using about 1 teaspoon of oil.
Serve hot with corn salsa. |
