Classic Pumpkin Pie

Ingredients:
9-inch pie
shell, unbaked
2 eggs or 4
yolks
¾ cup brown
sugar, packed
1 ½ cup
cooked, mashed pumpkin
1 teaspoon
cinnamon
2 tablespoons
pure maple syrup (may substitute molasses)
¼ teaspoon
cloves
½ teaspoon
ginger
½ teaspoon
salt
1 1/3 cup
scalded milk
Directions:
Whisk
together eggs and milk; add remaining ingredients and whisk until
smooth.Pour into
prepared pie shell.Bake
40-50 minutes at 425°
or until center is set.Cool
before serving.
Notes:
I make this
with egg whites and low-fat milk, and it turns out great.Also make it without the crust and serve as pumpkin pudding…
