Ingredients: |
Salad:
1 can black beans, rinsed and drained
1 can blackeyed peas, rinsed and drained
1 can pinto beans, rinsed and drained
1 can corn, drained
1 small jar pimentos, chopped and drained
1 cup chopped celery
1 cup red and green peppers, chopped
1 small onion, chopped
Dressing:
1 tablespoon water
1/2 teaspoon pepper
1 teaspoon salt
1 cup sugar
1/2 cup olive oil

Directions: |
Boil
dressing ingredients and pour over the beans, etc., and cool. Serve
with Fritos scoops...can also add poached, cut up chicken and have it on
lettuce or serve in wraps. |
