White Chocolate Oatmeal Cookies

Ingredients: |
1 cup
butter 1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 ˝ cups old fashioned oats
˝ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces white chocolate chips (Ghiradelli if available)
1 ˝ cups toasted chopped pecans |

Directions: |
Preheat
oven to 375 F. Cream butter and sugars together, beat in eggs and vanilla.
Stir together flour, oats, salt, baking powder and baking soda. Mix into wet
ingredients until well blended. Stir on white chocolate chips and nuts.
Shape into golf-ball sized balls (I use a medium ice cream scoop); bake on
ungreased cookie sheet (at least 3 inches apart) for 8-10 minutes or until
lightly brown around edges and set in the middle. Cookies will appear
underdone – do not overbake! Remove from oven, cool on sheet 1-2 minutes
then remove to wire rack or parchment to cool. |
